I got a request for these two muffin recipes. Anyone can try them, they are delicious!! For those who were in Arizona last year after Christmas, we made these for my birthday breakfast. Tasty!Morning Glory Muffins
2 1/4 cups flour (can use 1/2 wheat and 1/2 wheat flour)
1/2 tsp salt
1 T cinnamon
2 tsp baking soda
3 eggs
1 1/4 cup sugar
1 cup oil
1/2 cup raisins
8 oz can drained crushed pineapple
1/2 cup coconut
1 cup shredded apple
2 cups grated carrots
1/2 cup nuts
1 tsp vanilla
Mix all dry ingredients well.
Mix sugar, eggs, ad oil together. Add dry ingredients, fruit, carrots, nuts, and vanilla.
Stir just until mixed - do not over stir. Stirring too much gives the muffins a spongy texture.
Pour into muffin tins and bake at 350 for 30-35 minutes.
Brown Sugar Muffins
1/2 cup shortening
1 cup brown sugar
1 egg
2 cups flour
1 tsp baking soda
1 tsp salt
1 cup milk
2 tsp vanilla
Cream together shortening, sugar, and egg. Add dry ingredients. Add mild and vanilla. Bake at 400 for 8-10 minutes. makes approximately 2 dozen muffins.

haha! It could also be 1/2 wheat and 1/2 white!!
